How much does damage reduction armor reduce? Like 10% or something?

It says -1 (non stacking) so...it gives you -1 damage from every source
And it's non stacking, so putting on multiple pieces of damagereductioning armor is pointless.

The reduced damage from Ascalon and Knight's armor is -2.

Edit: (The above is for armors available in Droknar's Forge and PvP character creation).

All damage reduction armor - namely, Ascalon and Knight's - is -2 damage. They don't stack with other pieces of armor, but they do stack with runes and shields.
