PvP is "Player vs. Player". The PvP areas are the Arena and the Guild Hall (you may get one if you are in a guild).
PvE is "Player vs Everything". Most areas are PvE areas: you and your teammates fight monsters.
There are no different races for player characters in Guild Wars and as for professions, you should read this GWGuru article.

As far as Guild Wars goes, that'd be everything with a life bar. Now, that doesn't mean everything is a threat, but they are all potential dangers.

Okay, Player vs Monsters then

I always though PvE was Player Vs Enemy.
But someone told me it's Player Vs Environment.

Actually you are right. I researched Acronymfinder.com and it is indeed "Player vs Environment".

So if i'm right PvP is a world where npc's and real players can kill you.
And in PvE you only can get killed by npc's... right?

Sorta.
PvP is where to fight in special arenas with no npcs exist, then you fight an opposing team.
PvE is in an environment, monsters/npcs will attack you. And players, are not fighting you, but helping you.

Guild Wars does PvP different than other games.
In PvP in this game, you enter with a party into either an arena, the tombs, or a guild battle. In these missions your team will be fighting against another team for a goal of killing them all, killing their guild lord, etc.... In the PvP sometimes there will also be NPC characters who you may have to fight as well.
in PvE the only enemies you will be fighting are computer controlled enemies. These could be animals, skeletons, AI controlled "human" combatants, etc... and you will face them in either an explorable area or in a mission while trying to complete objectives.

Ok thanks , i think i understand now.
But there's 1 thing, if you wanna switch like from PvE to PvP, do you have to register a new char wich is than PvP, or you only have to log out and click on PvP or can you just walk in the game to a PvP world?

All you have to do to switch between PvE and PvP is go to a different mission/outpost- you can do both with the same character(provided it's a role-playing character and not a PvP-only character). Each mission in the game has an outpost, regardless of whether it's PvE or PvP. If you want to play some PvP, all you have to do is open up your map[M], and click on one of the PvP mission outposts, which show up as red dots. There's currently Arena(random 4vs4) and Tombs(tournament-style matchups with 8 players per team). There's also Guild Battles which you initiate when you have a team of 8 players from your Guild Hall- there's a button on the interface when you're in the guild hall that will let you set these up.
