I personally haven't tried dying weapons, but maybe the type of weapon affects what parts of it change color. Maybe something about it makes it really unnoticeable.

you could dye your weapons in beta... i don't know when they took it out, but i really liked it, gave your char that extra bit of customizing, of course you can still dye them, and they will change color on your doll in inventory, but in game they wont change

The only part of a sword that changes color when dyed is the pommel, from what I have seen.

I dyed my long bow blue. It's now completely blue instead of the standard brown.

It all depends on the weapon.
The wooden or handle parts of weapons will dye. The metal parts do not. (You can't dye metal anyway! Tinting the alloy is done at creation not by covering it in paint!)
