Say i do warrior for my second profession, can i do other profession quets to get exp or will it change my 2nd when i complete it

you can do the other quests. You will then be asked if you want to change perfessions. then just choose not to.

Warrior/Monk is standard as Ranger/Mesmer is

It depends on what you want to do. If you want to get into the thick of it with your sword and hack on some bad guys, go W/R for the armor benefit. If you'd prefer sitting back and paying a support role with arrows and skills, go R/W since Ranger's armor is weaker.

R/W capitalizes on Expertise. W/R uses the armor.
