Hi,
I am currently playing in Old Ascalon (before the Searing). My primary profession is Elementalist. I am currently undecided as to what I want as a 2nd profession. I have already went through and received the Monk skills from a Quest (Healing skill and Smite Undead skill) but I have not officially picked Monk as my 2nd profession.
The question is, that if I now want to try the Mesmer Quest, I have to give up the Monk skills to receive the Mesmer skills. What happens later if I don't like the Mesmer skills and want to switch back and take the Monk profession? Do I get the Monk skills back that I gave up or what?

Not sure if there's a way to get the skill back if you've COMPLETED the quest. You'd have to start the quest again, which probably won't work.
If I remember correctly you receive the skills at the BEGINNING of the quest. If you just wanna play around with your secondary profession for testing purpose the best would be not to complete the quest, so you can return later any time and start over. In that case you'd receive the skills again.
You can buy all the skill from pre-searing from a skill trainer in post-searing Ascalon City. But that'd be a waste of skill points and money.
You can receive some of the skills from pre-searing quest again from quests in post-searing, but not all of them, I think.
Anyway ... once you've accomodated yourself with the game it is very quick and easy to create a new character and collect all the skills available in pre-searing and make it to level 6 or 7, so you're ready for the Academy. It's only 2-3 hours, so you don't loose all that much if you start over.

Let me add: This guide can't be recommended often enough. Helped me a lot when I was a total newbie.

When you do the monk quest you are given some skills, if you then go for the mesmer quest you'll be asked if you want to give up the monk as a secondary profession. Go ahead and do it. Try out all of the secondary classes. You can always go back for the monk quest and get the skills again but remember if you accept any one of them, then your stuck with it till the near end game. There will always be a box that asks if you want to abandon the previous second class or if you wish to accept it as permanent. As an Elmo you have the option of becoming a good primary healer, the ele class has a large energy pool and if you put attribute points in healing prayers you can heal alot. or still be a nasty damage dealer.

Once you've COMPLETED the quest you've confirmed your secondary profession pick and can't change it any more (until MUCH later in the game). So if you still got the option to change it, this means you can't have have finished the quest. And this means you can always go back and pick up the unfinished quest again, with the assigned skills.
