I've found Rotting Flesh amazingly effective. I've already started getting "green bar" syndrome playing other chars [if opponents are not diseased/poison then something is wrong :P] .
On my Mesmer, Arcane Thievery is just plain amusing :P I just love stealing spells and trying it out without ever having to be that class :O . Ohh, nothing as cool as stealing

As others have said, Empathy for melee fights, backfire for casters. Nothing is more satisfying than watching critters/people bust their own guts. 
I also like a bit of Conjure Phantasm and watch things run around frantically healing themselves as the life is slowly....painfully...sucked out of them.

On my Me/N I love Mark of Pain and Shadow of Fear. Get a tank in there hitting the one with Mark of Pain and cast Chaos Storm to help with the AOEs. Nobody can forget Empathy and Backfire though . My character is only level 13 but it's likely I'll end up using most of these skills until late in the game.
