I just bought GW last night, but I made my character today. Well, I want to be a necromancer. But I am not sure what to sub? In FFXI, there was always a cookie cutter, but here, I have seen a much larger variety. So which should I sub ><?

Well, first of all, what is it that you want to do? Do you want to be a minion master? A blood/curses degenerator? It all depends on how you want to play necro. You could even go N/W with death magic for some interesting effects.

It really doesn't matter what you pick. Every profession can work with every other, just in different ways. Just a few examples for necromancer..
Mesmer will give you more hexes, which combined with necromancer curses can be devastating to your opposition.
Monk will give you some heal spells, which can be used to better keep your minions alive should you go with death magic.
Warrior will give you some melee ability, but you'll need a way to protect yourself because you'll basically only have caster armour, which won't help you in melee. Warrior can also be used for the many stances it gives to protect you in case something tries to melee you.
Elementalist with fire magic and soul reaping will give you huge amounts of energy when large groups die, but even if you only manage to kill one thing, soul reaping will allow you to keep nuking everything.
Ranger will give you ranged attacks (and a pet), which can work well if you use curses to weaken your foe, and then pick them off easily.
Of course, you can always ignore your secondary like most people seem to do, but pretty much anything will work, though some things obviously work better in different situations.

I've ascended with my primary necro character. I've played her a TON. I've gone through almost all the secondary quests and gotten skills that I wanted from each class.
Here has what I have come up with...
If I choose ranger secondary, it's either because I want to have fun with a pet (though it's primary use is another corpse for me... just wish skill disabling didn't happen when it died) or to assist in trapping in Underworld.
If I go with monk it's because, well, that's what I started with, that's what I have the most skills in, and at times, I don't mind helping the primary healer of the group out. Though I NEVER, EVER, EVER tell a group that I'm using any monk skills because then I get labeled as a healer and am expected to do it all the time. I just surprise them when suddenly they get hit with Word of Healing for 150+. I like monk because I don't always have to rely on the healer to stay alive and if corpses aren't dropping, I can still help out.
If I go elementalist, it's because I like the energy saving glyphs. Christ on a cracker those are sweet. Making my 25 energy summon turn into a 15 energy summon is nice. Allows me to send out more debuffs and I grab some fire skills to add to the damage (though if you go earth, you can help protect yourself or team).
I haven't explored mesmer a whole lot. But N/Mes apparently are a great combo. Great for stealing energy, debuffing, and generally wreaking havoc.
