Hi there, being new at Monking, I see loads of articles on Monk builds over here, however, not a lot of info on which Monk build does what.
So for example, what is, and what are the advantages and disadvantages of them??
So far I found the 55 Monk, Healing Monk, Bonder

This is probably just a noob question, but it would help me very much to decide which way to go.

Well first off, a 55 monk is not what you want if your new to monking, that is not really a team sort of build, a 55 monk is a solo build for farming and running (and reletivly uncommon for a 55 monk runner.) If your starting off I would just go with a standard healer, in order to fully answer your question I need more details.

If your trying to start off along the lines of PvP monk, I'd go with a Word of Healing monk, thats probably the easiest to play.

As for PvE, just simply go through the game monking for missions and such, doing streight up healing, with maybe some condition removal, AND NEVER LEAVE WITHOUT A REZ! At that point, you should be familiar with things to the point at which you'll see these guides and be able to understand what their purposes are.

Also, there is the Blood Boon Prot.

That build consists of Protection skills, while maintaining Divine Boon, also Offering of Blood to boost your energy back up.

Attrabutes are (Well at least when I monk):
16 Divine
10 Blood
9 Prot

Right, thx for the answers,
my Monk at the moment is a Mo/E, and as suggested, I am at the moment trying to do the healing, using "Heal Party" "Orison of Healing" and "Divine Boon"
combined with "rebirth" and some smithing spells (Bane signet) for self protection, more than anything.
I have got two staffs at my disposal, "Smiting staff of Charslaying" (gold), as well as Kephkets Refuge.
Then I have 9 Smiting, 8 Healing, 3 Fire I think (GW server is down at the mo, so can't check)

Any tips much appreciated.

ditch all that you don't use for healing and divine, divine boon isn't that nice to have cause you'll overheal. i'd say take:

heal other
Word of healing
healing breeze
orison of healing

those skills will be enough to complete the whole game, get them asap and use em forever, these will be enough to get through most of the game (as a healing monk) just for atributes put everything in to healing and divine and you'll be fine

This sounds like good advice, however, wouldn't it make you vulnerable to attacks in a group where they expect the healer to heal, but forget to protect the healer (which happens a lot tbh)??
Also, heal other is not too hard to pick up, however word of healing only can be picked up during the desert runs, and I am only at lvl 13 at the moment, so that will have to wait a couple of days.

Agree with Rogier, concentrate at the moment on pure healing skills.

One of the best protection strategies for a monk is positioning/running.

Do not expect the rest of the group to protect you, as in my experience this is very rare in PVE. If you are receiving a lot of damage then reposition yourself so that the aggro is on the classes in your group that can handle it, (warriors). You can’t heal others if you are spending all your time healing yourself.
