Essentially anything that resembles a functional weapon.
The Long Sword would be my favourite of the sword skins.
Any of the single-bladed axes.
Hammers... well I have this thing against two-handed hammers... long story.

Tall Shields and Shields of the Wing/Defender/Aegis are probably my favourite of the shields. Shame the latter isn't dyeable.

My Geomancer and Bloodmancer use the Pillar and Torment, respectively. That's probably my favourite staff skin, and the mods are at least helpful with their builds. Though chances are I'd use them even if they weren't exactly optimum.

I dunno for a mesmer, but I like the fellblade... looks especially nice the way it matches my black armor and all :P

I like the Storm bow for my ranger but I have yet to find a good one to use. I've got two crappy ones that I keep for the hell of it. I love my fellblade. I dyed it red, which doesn't really color it persay but it does cause flickers of color in the animation and makes it look partially bloodstained which is nifty.

I'd have to say the Jeweled Staff that has the 2 dragon head skin like Ragos does....Or the Rago's 
or the Earth staff with the Black floating Crystal on it....

As far as other weapons.....Simple old Chaos Axes and Etheral Shields are cute...Stormbows are 2...Otherwise I just use whats best mod wise

I love seeing IW in PvP, gives my mesmer a field day when I run Illusion and steal it off people with Inspired. The fun of switching weapons. Its also a great, shatter, drain, and usually "Kill me now as I do nothing" target. Now what is really fun to see is a Me/W running E-denial and Fear Me. Or hell even some odd Me/W build that does creepy things, god knows I have fun experimenting with this. As for IW sword (as that is the best weapon to use with it) Wingblade, its very mesmerish.
~ Why don't we have a nice Rapier like the cover Art Mesmer has? Riptose would actually... be fitting of its name. Who the hell fences with a long sword :P

Icy Stormbow or Defense was pwnzers on my ranger back in the good ole days but I don't really like the skins for many of the ele weps. Necros, i'd sign off on Bortak's bone cesta, but his claw just looks dumb. i'd rather have the set match, so you have two of those evil giant black gloves on both hands instead of the puke colored stick we get. i mean, they call it a claw, right??? where's my wolverine?

On a cheaper note, I have a sword on my monk that looks exactly like a crystalline, that old pre sword from the Moa Bird Quest? Way cheaper to get and good for casting lol!

staves: agree with elementalist tara, orrish staves are great willcrusher looks cute but got not-so-good stats, so i usually prefer wand/offhand combo, bortacks staff looks great but again stats are not so useful....
wands/offhands - medusa head offhand for necros and ivor's offhand look are my absolute favorites. there are alot of great-looking offhands in factions f/ex paper fan

For IW, whatever has the fastest attack time is best. I think that is swords, (maybe dagger when factions comes out).

The only weapons I have for aesthetics are for IW. I just tranistioned from a chaos axe to an IDS, as it is my favorite. I also have the Ogre Slaying Knife, though, so may give that a whirl (prob. won't stay, though, as it doesn't have the enchantment bonus). Similarly, if you could have modded candy cane weapons, I'd have been using that since Christmas. Alas...

I love the Crystalline, but it is so SHORT! So, I traded in my 14^50 Crystalline for a 15^50 Fellblade and I have kept the remaining money for Factions. Gotta love the huge and animated Fellblade! If only it wasn't so common..
