Just a couple of 'collectors edition' items. Nothing special.
Of course, there may be more minor add-ons, but it doesn't affect game play at all. Even if it did, it's so minimal, it's unnoticable.

Go to guildwars.com and you can see what comes with the collector edition. Physical stuff like a mouse pad and in-game stuff like toy dragon and fancy dance for the ritualist and assassin. No effect on game play.
The pre-order now just gives a max staff and daggers for any character.
