Armor and Health is the 2 most things ive been having trouble with.
I have a level 12 assassin and when ever i jump into a mob ( behind a tank) im either getting Mobed or Just seeing that im loosing loads of health by the second,By all classes too!
is there a certain build for PvE that i can base apon? I know that assassins arent tanks and are a hit and run class.
one other problem is that im having trouble knowing when im criting on my target,is arena net going to tweak this in some way?

You have to know how to pick your targets. Don't rush in straight away, wait for the tanks to draw some fire first, then run/warp in.
As for Crits, whenever the little purple number shows up on your character, that means you're getting energy back, which means you just got a Critical hit.

I would say pick your targets very carefully. You can be far more helpful to the team and probably take much less damage in the process if you pick the targets to assassinate that are at the rear of the group. Picking off the healers / priests of a mob is a good way to accomplish this. But just make sure that you have enough health / energy to get to safety.
I cant really offer that much on build as I too am still at pre-searing, but take with me 2 lead attacks, 1 each of offhand and dual attacks. A res, heal skill and teleport +1 other. Most pre-sear skills tend to be guided towards critical hits and dagger skills, bung most of the skill points into them. Also if you can do it, get a major rune Vigor, its helps alot. If you've got Prophesis, go to lions and put one in storage cos they aren't freely available in factions atm.
