I've since decided between the Luxon and Kurzick armour but, due to my inability to change the title of the thread, I've had to put this disclaimer here instead. I'm working on re-organising my equip, so any criticism and suggestions would be greatly appreciated.
Basic Stats:
460 HP, 99 to 114 energy based on secondary equip.
14 Energy Storage
14 Fire Magic
Elite Skill:
Ether Prodigy
Primary:
Fire Wand - 15 Energy, -1 Energy Regen
Secondary:
Flame Artifact - 12 Energy, 20% Fast Cast, 20% Recharge
Chung's Focus - 27 Energy, -1 Energy Regen, 45 HP when enchanted.
Armour:
Fire Headpiece (Forgot the name) of Minor Energy Storage
Hydromancer's Robe of Major Energy Storage
Pyromancer's Gloves of Minor Fire
Geomancer's Leggings of Minor Vigor
Aeromancer's Shoes

I've got both a Superior Energy Rune and a Superior Fire Rune, so I'm currently trying to work out which would be most beneficial. I have a few choices, from what I can see:
1. Replace my Major Energy Storage with a Superior; lose 25 HP, 15 Energy Storage. Alternatively, make it an Archmage's robe and only lose 10 HP.
2. Replace my Major Energy Storage with a Superior Fire; lose 25 (or 10) HP, 12 Energy Energy Storage, 16 Fire
3. As 2, but put Major Energy Storage on my Shoes as well; lose 75 (or 60) HP putting me at 400 HP, 14 Energy Storage, 16 Fire
4. As 2, but put Superior Energy Storage on my Shoes as well; lose 100 (or 90) HP, putting me at 360 HP, 15 Energy Storage, 16 Fire.

Basically I think you were being criticised for using the +15 energy/-1 energy regen items. They are totally horrible except as a secondary switch set in PvP and I can't imagine any situation where one would need them in PvE unless one had a totally cavalier attitude to energy management.
You're gaining 30 max energy at a cost of 2 pips of regen. Each pip of regen is one energy every three seconds. That's 2 energy every 3 seconds for two pips then, or a mere 45 seconds to regen the whole extra 30 max energy you would have gained by NOT using the +15/-1 set. If you EVER have these items equipped for more than 45 seconds you have made a net energy loss, and that's not even mentioning the sad fact that you're missing out on recharge and cast time bonuses or from the mods that can be put on a staff, like 20% longer enchantments, 60 extra health or 10 extra armour (or other combinations)

Add to that Fire Attunement and Ether Prodigy and I've never been in a situation in which I've actually required energy I didn't have. I very rarely cast enchantments besides Ether Prodigy, so that's useless for me, I get enough armour off my armour and have about 520 HP when enchanted?

Well sticking to the topic here is what I have done thus far...
I have one set of FoW armour (battle mage) that I currently use for my fire ele build (i accidentily put my sup fire rune on the robe
).
The extra armour is working well for physical attacks but I now see the elemental attacks much more often. So I have a staff with ele warding (helps a bit at least) and can cast ward of ele too. But that takes one of my spell slots
So I have been thinking of getting the luxon 15k armour (i just like the way it looks), but was wondering how well the mixing of armour stats works? Should I rather go for one set instead, perhaps tempest?
