Do you have to do all quests or just the one's suited for your Professions?

The only quests you must do in order to advance to story is any quest which is labeled as "Primary Quest"

i mean like the list here, but i want the exp and to unlock skills and get items i can sell...so i'm assuming if i want to do that then to complete all quests, otherwise complete the ones that happen to deal with N/E professions

There is only a few quests which are in relation to the different professions. Most are shared by all.

If you want EXP and gold for skills, then do them all.
