I've heard that many Mesmers can interrupt 1-second spells eaqsily, or even 3/4-second spells. But I'm unable to interrupt 3/4-second ones at all, and I can only consistantly catch 1-second ones with Stolen Speed or the like. Other people have suggested that lag or graphics settings might be the problem, but I kind of doubt that; it's probably just my own reflexes. It seems like I'm always either a fraction too late or am so hair-trigger that I try to interrupt Spectal Agony or something. Can any master Mesmers share their techniques for catching 1-second spells, and explain how 3/4-second ones are even possible?

Off course you need a good reflex without any slow casting hex against 1 or ¾ sec, but not having a godly reflex like the Mesmer hench in Kurzick
What I can say to interrupt is by Blind, Tricking or Know the pattern of your target.
So, from me, I do blind interrupt and/or trick the target. Predict can be a big word, but, it can helps a little. If its too fast, cast diversion in correct time to disable it.

Practice makes perfect; you can interrupt more easily if you know what is comming. Say you have the skill powerblock (prime example here) and an elementalist that you know is using fire magic (because you interrupted her fireball earlier) begins to literally make a bee-line run towards you.
You know that inferno and the like are comming.
What to do (while learning how to interrupt)
-Stop attacking, this can reduce lag to a lessor degree
-Do not cast any other spells, wait
-Watch the target carefully; pay less attention to the other characters
-Watch her movement, as soon as she stops moving...
Interrupt; inferno, flamejet, lava front, etc. disabled.
Learn your opponent; learn their patterns. Anticipate their build based on their weaponary/secondary class. Examples are if you see a mesmer using a sword more often than not they are using IW, if you see a ranger with a curses rod they are likely running touches. Not always, but more often than not. The most likely classes to "fool" you are other mesmers and monks...other than that this trick of guessing is mostly solid. Not even War Machine uses "trick" weapon sets in their current builds.

Now seriously, trick the target and try to predict at the same time can help you. If you dominate the target movement (not talking about Domination...bah, almost) and they follow what you want, you can predict what he will be his next move and interrupt it.

Yeah, I can interrupt 1 second casts most of the time, but I either have to be lucky or concentrating on that one caster to get that or anything below 1 sec. I remember my reaction time was something like .43 seconds or something, so that might have something to do with it. Which is why I have 5 interrupts on my bar lol...

I've said this before somewhere but I'll say it again. Make your target enemies action monitor bar absolutely massive. This means that the tiny skill picture will appear pehaps 0.005 seconds earlier making the whole train of thought leading to an interrupt (its not a reflex its a rapid voluntary response to that tiny lil stimulus which we are trying to make bigger) just that lil bit quicker.
Of course strong black coffee helps no end but me and eaimirth both agree that lag totally ruins hardcore interrupters day just because lag can be so unpredictable and specialist interrupts like power block don't really have friendly recharges if you miss the interrupt due to lag.
All we can hope for is that all our hard earned money used to by factions is going towards increased server stability
