Simply load up on smiting...

Smite
And then repeat until the bloody doppleganger is dead. But, one must note, common sense was used and bane signet utilized when it could knock down Doppleganger (when it was attacking), and also making holy strike more useful

I did it by using pacifism, reversal of fortune, symbol of wrath and balthzar aura.
just run up to him and use the two smiting skill... then use pacifism on him to regain energy and health. cast reversal of fortune when pacifism ends and your other spells are not done recharging yet. do this about 2 to 3 times and he should be dead. pretty safe way to do it.

it took me quite a few tries and many build tweaks to beat my doppleganger as a mo/me...i finally did it using mainly retribution, symbol of wrath, and arcane echo, i would cast retrib on myself and recharge mana, and cast arcane echo right before going in, then i would cast symbol of wrath (he never would cause i had useless skills stacked up) twice and wait for it to recharge while he wailed on me and himself with retrib. Eventually i got him (fairly fast actually.) I had no healing spells.

Beat it without Healing breeze easily. Doppelganger is ludicrously easy to beat in general, but with a monk and secondary you can walk all over him in complete safety.
Actually, I have never died facing a doppelganger and always gotten the kill in time for bonus.
If you are lacking in ideas, remember that you also have a secondary to draw on. And that your opponent is an idiot. Most recently I beat him to death with no healing along for either of us, by giving him the wonderful enchantment "Life Attunement". He puts it on right away, and proceeds to attack at greatly reduced damage, maintaining a useless spell the whole time.
Most really easy ways to beat the double are a bit lame, but at least it isn't a skill he/she doesn't use, but instead one that he/she does use. It is also easy to get healing for example that the AI won't use - after all, the AI will only use spells that cure conditions for example if there is a condition on him, wwhile you could use it for the divine favour bonus, or to deliver damage through a Zealot's fire for example. The AI will load up enchanments that are useless, and will waste energy maintaining them. The AI won't think to recast an enchantment that is already up to gain the divine favor heal from it, and won't think to spam a spell to gain the advantage of simply having cast something.
If you feel it would be more honorable facing the AI without trying to outsmart it feel free by all means, but the fact is that it is well armoured, does more damage and has maxed out attributes, so you'll only beat it by using your brain, even if it is something as simple as moving out of an area of effect spell.

Yea, i beat it [as someone also mentioned] with Divine Boon, except i just used Bane Signet and my Staff for damage. If you cast divine boon while you -already- have it on you, you basically trigger the spell on itself [and can easily heal for 80+ HP depending on your Divine Favour]..even better, there is no recharge rate for this spell.
Anyway, as for damage with Bane Signet. I used my secondary [Ranger] to throw in some of those slow casting spirits/traps. Doppel will cast this straight in the beginning, which in my case meant doing 40%+ damage to it by the time it started using Bane/Bow. From there it's just downhill for the poor fellow.

There's obviously a reason why AN let that skill slip into YOUR arsenal and not your doppelganger's.
