It's not that simple. A warrior can be a very effective damage dealer as well as a meat shield. I, personally, prefer to be killing things rather than a wall that the rest of my party cowers behind. And tanking is useless in the Player vs Player aspect of the game.
As for monks, monks are many things. They can heal, of course, but only an ignorant player thinks that is the only thing they excell at. Monks can also cast protective spells which can keep you from taking damage in the firstplace, and what little bit gets through can easily be picked up by the healers. Monks can also use Smiting Prayers to put out awesome amounts of damage - especially to players or monsters stupid enough to stand too close.

Nope. Each class has a few sets of armour. What type of armour you can wear is decided by your primary profession, which also decides your "primary attribute".
As for weapons, each class has a few attributes and weapons associated with them. For a ranger, Marksmanship is a requirement to use any bow. For a warrior, Hammer Mastery is a requirement to use any hammer, Sword, and Axe mastery is a requirement to use any axe or sword. You can equip a weapon you have no attribute for, but it will do the lowest possible damage (starter weapon dmg).

Nope. You don't need to go faster, because you can instantly transport (for free, no runes or whatever) to any point on your map that you've been to before. (towns, outposts, etc.)

Nope. All armour is made simply by collecting the materials and a bit of cash, and talking to an armour crafter NPC. Different towns have better armour crafters.

And as for the server thing... The game runs seemlessly on one network. There are "districts" to divide up the population, but these can easily be changed between at the touch of a button. When you create your account, you'll be asked your home region. America, Europe, or Korea. The home districts of these three regions are divided, but you can interact internationally through international districts. These are divided for a Worlds at War concept in which players compete internationally and unlock rewards for their home region while they are winning. There are probably many servers, but they're all interconnected.
