There is no "total" armor rating.
Each armor piece has it's own rating and thats what counts. When you get hit, there is a percent chance of which region will get hit - and it's that's region's AL whoch is used.
Say you had 100 AL chest piece but 5 AL leggings.. and got attacked by a critter.. and say you got hit..
- in the chest = the chest armor's 100 AL is used vs the critters damage/attack power
- in the leggings = the leggings 5 AL is used vs the critters damage/attack power
So with this system in place, each region you can be hit each has it's own armor and AL and thats what is used to detirmine damage taken when hit.

I'd recommend reading it.

Ok I get how each piece has a seperate armor rating. But what about spells, enchants, focus items, etc. Where does that armor figure in. For example, if I am holding a flame artifact with +5 armor, how does this armor get figured into the equation. Thanks.

Armor added from spells/items is added to every piece you're wearing. The only item this isn't true of is a shield, it's armor bonus is only applied to attacks from the front and sides(to a degree).
