i have a Marks +1 (20%) chance, and just want to know exactly what i have to do to activate it..
the exact description says: Marksmanship +1 (20% chance while using skills)..
therefore, doesnt that mean that i have to use some sort of skill requiring marksmanship attribute to see the effect?

No, it means that when the grip goes off (roughly once every 5 shots) it'll be as if you had a marksmanship of 17.

Sell it for way more than it's worth (the +1 attribute mods, even the 20% perfect ones, are not worth using if you care about efficiency/effectiveness), buy a +5 defense grip for less than 5K, and put it on your favorite shortbow. Take the extra cash and buy yourself something nice.
If you insist on using the sub-par +1 mod, then you'll get a 20% chance of having +1 to marksmanship (yes, it can boost you above 16 in that attribute when it hits) when you use a skill.

now yes i understand that in most ppl's opinion, sundering strings and marks bow grips dont *really* do much..which is probably true..however it makes sense that the creators didnt make these bow strings ultra powerful..the purpose of these upgrades is to get that once in a while dmg spike...
i used my marks +20 and a 10/10 sundering on a perfect 15 over 50 hornbow. this is because i wanted to give the already powerful hornbow (inherent 10% armor pen) every opportunity it could have to do more damage. but dont worry, i also have backup bows
but now i have a bow that i kno will do more damage per shot that any other bow, plus has the capacity of a huge range of damage (because of upgrades).
so this is why i wanna make sure i know exactly how to activate this

When you use a marksmanship based skill from your skillbar (ie Barrage) you have a 20% chance of it activating at a level +1 to what you have in the attribute, ie 17 instead of 16

I think if you spam attack skills like Barrage and Dual Shot then it will be useful.

Nikos is right in what he said; if you're a skill spammer (like me with Barrage ohhhh yes) then you'll be encountering that occasional damage spike. For a Hornbow user, your probably standing outside of the battling and firing in, dealing damage and avoiding hits.
So for your instance, perhaps the +1 Marksmanship is more beneficial than having +5 armor; but it's all up to your personal preferences, and your style of warfare really.
Also one more thing on the Hornbow, check out the Guides section of this website, and check out the bow statistics; it's usually better to use a bow with faster firing rates (I can't think of any reason why not), to maximize not only your damage per second, but also to allow you as many chances as possible to get that +1 Marksmanship damage spike
