Ascension is in the dessert right? ANd hte only way to the desert is doing sanctum cay. So my question is the 3 mission after that is when u are ascending? Can i go to the desert and just do the profession changing quest without ascending?

Ascension is done at Augury Rock. You need to complete three missions, Thirsty River, Dunes of Despair, and Elona Reach, in order to gain access to your doppleganger, whom you beat, to Ascend.
And no, you cannot change your secondary profession without Ascending.
