Do they Stack? Glyph of energy and Glyph of Sacrifice all on one spell?

No - they affect the next spell cast. Casting a glyph followed by another glyph would cause the first to affect the second and the second to affect whichever spell.

But a glyph is a "glyph" right not a spell?

My bad - after a brief test, one glyph won't affect the other, it just outright overrules it. You still only get one per spell though.
