whats with the 1000 health?

It is easily possible to get well over 1000 health with Warrior alone.
-Already Avaible to a Warrior alone:
Superior Vigor +50
Staff with two +30 Health (+60)
Endure / Defy Pain +258 each at Lv.12 Strength (+516)
That all adds up to +626 Health.
In a Team with a Monk and Ranger you can up it EVEN more and hit 2000 health!
Fertile Season +290 at Lv.12 Beast Mastery
Symbiosis +125 for Every enchantment on you.
Vital Blessing +168 at Lv.12 Protection
Add that all up, slap several enchantments on and you have more health than a Guild Lord!

I've seen a lot of people mimicing the automated "I have XX of YY energy" and putting in their own numbers. They LOOK like they have a lot of energy, but its just someone being funny!
Sometimes I've been out on quests where the whole team gets into doing this, it gets REALLY funny! People can get quite outrageous!
Like has been said, over 1000 health is possible, if temporary. But that much energy is a fake number.

1 W/Me with Illusion of Haste, Illusion of Weakness, Channeling, Arcane Mimicry to steal Elemental Attunement, Illusionary Weaponry, Arcane Echo. 6 enchants, plus Defy & Endure.
5 Me/Mo casting 31 different Monk enchants (I'm not sure if they could pull it off with the time limitations...) and Sympathetic Visage. Vital Blessing also adds health.
1 Me/N casting 4 Necro enchants and some skills to to help recharge everyone's energy.
1 R/E using Symbiosis, Windborne Speed, and carrying Elemental Attunement.
That would be a grand total of 43 enchants, assuming I did my math right - that would be close to 10,000 HP! However, I don't think it would be possible to have all of them on at once. I'm not sure on the maxes for Defy, Endure, Symbiosis, and Vital Blessing, or the limits on the Me/Mos' max energy, it'd help in an estimation.
We should test it sometime. I volunteer my W/Me!
