Well, as a monk you will be one of the main targets (at least for PvP).

With ele as secondary prof, you can throw up Armor of Earth and such for extra protection against those tanks. Also using Aura of Restoration while healing others, might keep you nice and healed at the same time.

With mesmer, you can use Hex Breaker to protect against other mesmers and necros. Use Inspiration magic skills to improve energy.

If you choose ranger, do not use a pet if you plan to be a healing monk. When your pet dies, all your skills have to reset and people will die in the meantime. Use the spirits instead.

Choose warrior if you want to be an invinci-monk one day.

Necro is interesting... instead of healing individuals you can cast wells of blood, wells of power, etc.

No one can tell you what to be... but I would choose Mo/Me.

Honestly, as a monk it doesn't really matter for PVE. You'll be loaded with monk skills. Take any secondary you want, ut for the sake of answering your question here are some ideas:

Mo/Mesmer : put some points into inspiration magic for energy stealing

Mo/Warrior: put points into tactics for defensive stances, or a weapon to be a smiting monk

Mo/Ranger: use beast master and have a pet that can tank (really cuts into healing abilities IMO though)

Mo/Necromancer: be your own best friend with the blood magic line

Mo/Elementalist: points into earth magic and you have some great defensive wards

I tend to go with Mo/Me, or Mo/N. But honestly, you can go with whatever you want depending on what you want your monk to do -- there's not really a 'bad' choice.
