I was wondering if anyone knows how well Guild Wars would run on a apple iBook using VirtualPC with the following specs.

Not sure, it may depend on how well it does directX.
I would use the trial version of VirtualPC if you don't have it already and see if you can load / install the client only. It uses the rendering engine for the login screen so you can kinda give it a try without having to buy the game.
