Im going to get this game next week but I have a question can you walk on a ship and ride it

You can walk onto the ships docks in Lion's Arch, but if you mean riding in it as if they sail, than no.

Yes there are ships you can ride, but only during cutscenes and only briefly. You don't really use them to explore or travel.
