Does this mean you allways get the + x% dmg on your sword? I mean: When is a sword attack NOT in a stance?

When i first started out i thought like you. I thought that when they said stance they meant standing still. But they dont. A stance is a type of skill.
example: Bonettis defense and sprint.

Dylanowns is right, by stance it means the skills. Like when it says Enchanted, it means while you're under the effects of an enchantment. As for stance it means while you're in a stance such as Defensive stance, Shield Stance, Deflect arrows, Gladiators Defense, Sprint, rush etc.

Hmmm, thats pretty different from what I expected lol. So I'm in a stance when I use a skill?

Only when you use a skill of the type "stance". This includes most warrior and ranger skills that increase run speed, increase attack speed, or give a chance to block/evade attacks. There are also stances with more esoteric benefits, especially for mesmers.

No. There are certain skills that are stances. Bonetti's Defense. Battle Rage. Etc. If you look at your skills, you'll see it.

Stances are such skills that say so in your hotbar. "Skills" so no you don't get it always, only when using such skills that dictate they are actually

AKA: STANCE: Bonetti's Defense
STANCE: Dwarven Battle Stance

Hope this clearified.

When you look at a skill, the first sentence will tell you what type of skill it is. Here are a couple examples since there are quite a few skill effects.

Deflect Arrows - Stance. For x seconds, you have a 75% chance to "block" arrows. This effect ends if you use a skill.

Executioner's Strike - Axe Attack. If this attack hits, you hit for +x damage.
