I was wondering how many servers will be available to play on?
If there are many, will there be servers for different countries, eg Australia, England?
I used to play Everquest for long time and i know they had some country server support which was good
anyone know?

There are more then likely hundreds, if not thousands of machines powering GW. However there is only one world in which your characters exist in, you play with everyone, Koreans, Euro's, Canadians, ect, all at once. You wont need to worry about making sure your friends/guild all pick the same server like in other games.

As Kunt0r said, GW isn't divided up into shards or servers the way many MMO games are. In GW, you'll be able to get together with anybody else in the world playing GW at the same time.... there's no separate servers where you have to be to play with your friends on that server. What they've done to help ease things is that whenever you enter an area where there's a lot of other people, the area is divided into districts with ~1-200 people in them. You can change districts by selecting which one you want to move to via a drop-down menu in the upper left corner of the screen.
ArenaNet will have servers around the world in order to keep everything fast. However, regardless of what server you connect to(which is decided invisibly- you'll connect to the one that you have the fastest connection to, I'd assume), you'll be in the same world as everyone else playing.... the game will undoubtably be served by several thousand computers, but it's all done invisibly, and everyone playing in GW can play with everyone else, regardless of where they are at, or what server they are connecting through.
