First off they may belong in "The Campfire" but here goes:
I play as a healing W/MO in FoW, but IF I were to switch anywhere to stances, it would be FoW. Stances would probably benefit a tank in FOW alot more because of dodge stances and such that makes you suffer no damage, so you wouldn't have to heal it in the first place. I myself; am still stubborn. I use healing.
Stances I'd recommend bringing: Berserkers, bonetti's, balanced <for that odd knockdown spot>, and other stances that allow you to dodge projectiles/melee.
thats my 2 cents.

Gladiators defense - disciplined stance - sheild stance in that order will make you a very useful and more importantly a live tank in either fow or uw but in fow once you have the book sheild stance will no longer be useful so you may want to take defensive stance there instead.
It is also never a bad idea to take endure pain and a self heal just incase your monk falls a little behind.

You do if you use skills like Endure/Defy Pain and Dolyk Signet.

I would recommend this thread as good place to start.

Not directly related to FoW, but the discussion is informative.

aside from the link that racthoh posted, i would also suggest looking at this thread:
http://www.guildwarsguru.com/forum/s...ad.php?t=70590
it is a relatively older thread, but it contains in-depth discussion on specific skills and how they work together with a fow build. some of the opinions there may be outdated (some of my own in particular), but its a good way of showing how to analyze the true worth of a skill and making your final decisions on your build.
racthoh's link is more recent and discusses both strategies and has a few builds posted throughout.
as a sidenote, i would advise against using the book if you plan on developing your skills.
