The main thing to remember is that this is a game, it's intended to be fun not a part-time job. It's important stuff but not serious at all. And no one - no matter how much they know about the game itself - can predict what will be the most fun for you.

It's pretty easy to create, try and then - if necessary - delete a character. It won't take long to find one that is fun to play.

Even if one of them turns out to be a dreaded warrior/monk, and even if you decide to use mending from time-to-time, it's perfectly OK with me as long as you find it amusing. By the way I am not suggesting that warrior/monks are the best starter characters, or that they profit from mending. Instead, I'm saying the real fun of the game is finding the characters that suit you then finding a way to play them that you find amusing.

In the long run, if you stick around, it'll all be fine. Most of us enjoy doing well. So that means bad character builds and choices will eventually take care of themselves if you're any good at this. (And if you don't prove to be good at the game, you may never notice, grin).

But ask anyone who is really good at this game and I firmly believe they'll tell you they've seen almost every combination of classes played well, and played poorly.

What I'm saying is that there is a lot of great advice in the answers here, but the real expert on what to do will end up being you.
