But like I said, it's all preference. Try some out, if you don't like it, you can always delete and remake <I know not the idealistic answer you wanted> but I found my place with my Me/N.
You might also want to look at the "campfire" section here, read some mesmer posts and get a feel for what people like...

I try to think of what secondary will most benefit from the Primary.
In other words, what Prof will most benefit from Fast Casting.
Elementalists, Necros and Monks will all benefit most. Rangers would be a better primary prob (better armor, and Expertise, but then again, quick trap setting and preps would be useful).
Warriors I can't see - wouldn't a Warrior/Me be better than a Me/W for an IW build?

If you're anything like me.. 7 skills on your skill bar are mesmer skills, which would make a re-usable res (monk) a good second profession.
Just be prepared to explain to people you DONT heal.
Alternatively, Necro makes a nice secondary prof. Domination/curses
And after the desert, you can change professions anyway, so wait till then to get the /w, most people don't get that a mesmer can tank and won't thank you for trying.

There is no "best" proffesion...That's part of what makes GuildWars such a popular game.
You could pick any proffesion and do fine with it.
It all depends on your preferences.
If you like:
Hexing: Mesmer/Necro
Healing: Mesmer/Monk
Spike Damage: Mesmer/*anything*
If you pick a spellcasting class then you can make full use of the Mesmer Primary Attribute: Fast Casting.
But, once again...No-matter what you choose, You can do good with it.

If you want to be popular with other people, chose Me/Monk. Everyone likes monks.
However, if you want to be more effective in an offensive role, Me/N and Me/E are better choices.
Just bear in mind that it can be difficult to mix and match classes with Mesmers - I tend to either be mostly mesmer or mostly <other class> but rarely is it a half-and-half spread of attributes or skills.
