To be honest, Guild Wars is a wonderful example on how a free market economy works. By any chance, if you are taking Economics, closely observe how Guild Wars is working out.

Most people will buy common crafting materials at about 12g-20g apiece. The two exceptions are tanned hide [around 25g] and scales [30g-75g].
When selling materials, note that you can probably get away with selling them for more than the trader is, as most people normally forget he/she exists.

I'm not too sure about the market for the rarer materials.

It is a good example, the only problem comes with inflation inherent in the model.

Take Black Dye for example, it is currently selling for over 1100 gold.

If you get a black dye as a drop you can:

A.) Sell it to the trader for 1 gold
B.) Sell it to another player for much more than 1 gold.

Selling it to another player would make more money, so you could afford to pay for your "farming" trips out to get more items. Someone would be silly to sell it to the trader. This is where the problem comes into play with the GW supply and demand economy.

If there is no influx of black dye into the traders, then the economy will never dynamically adjust the price back down because the supply isn't there; the price will continue spiralling upwards.

I remember the economy bottoming out in a couple of the beta weekends, I just hope that they have a way to fix this problem.
