There are a lot of conversations with my guild and such that I would like to be able to keep, much like logging an IM conversation, but there is currently no easy way to do this. You can take screenshots but that is a pretty bad solution. I would like to see a simple client side option in GW to log the chat channels. The simplest way to do it is as follows: if you have logging turned on, it would automatically log the channels you have active. So if you have Guild and Team active, it would log those, but not log Trade and All. When you make a channel active is when it starts logging it, and when you turn a channel off is when it stops logging it. There could also be an option if you never want to log a certain channel. So if you never wanted to log Trade, you could set that to "Never Log".
The log file itself would be a text file dumped to somewhere like Guild Wars\Logs, and would include the date and time logging started for each session... or, ideally, the time of each logged statement - but that is not totally necessary. The point is that it doesn't have to be overly complex. A simple text file will do.
Note that any (minor) processing done would be client side. There is nothing extra to be done on the servers. Therefore, this would be a very simple, yet very useful option to have.

And to further expand on the idea, perhaps a header containing hash information can be included in the log file.. the way the files are signed and cannot be tempered with.

Yes, some sort of hash info would have to be added if it was to be used in a report. Otherwise it could easily be forged. Although this is not necessary, as I am sure ANet has ways of reviewing logs of their own (as someone else pointed out).
