3 questions for you pros :

1) can ranger/war use shield? If yes, what type of 1 hand weapon can Ran/War use?

2) Do ran/war get extra armor to take more damage?

3) Does the shield increase armor ?

1) I believe any character can use any kind of off-hand item and weapon aslong as they have the correct attribute (Shields usually require Strength or Tactics).

2) You do not get 'extra' armour, other than what the ranger armour gives.

3) Yes.

as linkie mentioned, you can use any weapon you like that is in the game. however, you will need the correct attribute to be effective with it, ie swords use the sword attribute, axes use the axe attribute, etc. you could also use wands if you wish, however a ran/war will not likely have the required attribute for those.

Armor is determined by your primary profession. Rangers are known for having a good amount of armor that is better against elemental damage. Warriors get have armor that is better against physical damage. You can find more information about armor here.

Yes. There are several post about how shields work, like this one. You need to have enough points in Strength or Tactics and the appropriate shield to be able to use them effectively.

Here is a build for a sword/shield ranger/warrior that will give you an idea of where to start:
