In NM a warrior tanking with ursan up and a monk with seed prot spirit and healers boon is enough to keep one side.
The 6 others go and kill the rest.
In HM we used a SB monk with seed and prot spirit, keept the tank alive fine enough while the 6 others cleared the rest.
I my opnion a OF tank is a waste of character slot for the rest of uw, atleast another monk helps if you really really need it. Its the shatter that kills so make sure you have a cover enchant for the seed, the mobs wands all the time so healing is fine.

Me and my guild do this all the time. 2 Ursans and 2 Monks can rest dosnt really matter =/...Clear UW in just around 2 hours
But i would fill in the rest with 2 eles 1 SS/BR and w/e else u would like
