Between when Sorrow's Furnace was released and when Factions was released. Talk about excitment in the air...you couldn't go into a town without tons of activity, even in the furthest reaches of the game.

PvP-wise: Post-launch Guild Wars with only Prophecies
PvE-wise: Probably now.
I don't care about other players or Ursan (only used it once, in that mission which required it). But I do enjoy my 128 heroes, the 93849 weapon and armor skins, the 3 continents + expansion, the dozens of dungeons and elite areas, filling up my HoM with crap to work towards GW2 etc. pp.
I kinda miss some balanced (and open) PvP though, but then again I just hope it will be done right in GW2.

But I really hated the times when I was DEPENDENT on stupid and uninfused PUGs with RANDOM skillbars. Being stuck on a mission for two weeks simply sucks.
(Although once A.Net infused the Henchies, it actually was alright.)

GW was definitely way better when only prophecies was there. With the release of Factions, faction farming was introduced and that was the first step towards failure. Then PvE titles came out followed closely by PvE skills and there you go, the game turned into a mindless grind fest...gg.

There were some fun times, but it usually burns quick like a candle and then your whole guild is bored, or something gets nerfed, or whatever. It's been too disposable overall, poor design in terms of just letting people have fun so everyone leaves and it's even less fun.

Back in Prophecies, period. There was no title farming, no ursan, or even cheap builds, i.e., touchers. Prophecies was really the only time when people actually played for fun and enjoyment rather than grinding for title tracks. :/ hopefully GW2 will solve everything. Which it probably wouldn't.

I had my best times in the Prophecies reign. Loved the Sorrows update and all the excitement it generated, everyone was buzzing. Getting your first set of 15k armour, 8v8 HoH, waiting for your region to get enough wins so you could get into UW.
I'm still playing the game now, as much as I enjoy all the additional content that's been introduced over the years - for me, nothing beats the original. Good times

Hard to say really, the game was awesome in 2005 but it had some problems. They weren't anywhere that painful as today's ones and there was far far less whining on the forums then.
Things were changing with time and now while lots of issues have been dealt with, tons of improvements and new features got added and balance seems better than it was for most of the time, there are numerous new problems and the game doesn't feel as supercool as it was in Proph times.

Nightfall without heroes would have been golden.
Now, I love heroes, but I can agree with most bad things about it. Same goes with ursan. I love and use it, but that doens't make the people who hate it wrong. Same with the template saving/managing/loading, etc. Encouraged cookie-cutter. I'm guilty of this. Save a build, plug it in.

GW was best before Nightfall. In terms of PVP, the game still hasn't recovered from the broken-at-birth NF skills. And heroes changed PVE from multiplayer to true single-player. Heroes > PUG's, heroes > henchies, you no longer really needed a human being's help for much of anything. Playing with other human players in more difficult areas became more of an option than a necessity.
Not that I really care about the game's "economy," but NF killed that too with inscriptions. Once upon a time I had to settle for 13^50 or 14^50 mods on my weapons because they were "good enough" and I had to pay out the ass for perfect modded weapons. Now it doesn't matter. I can take a weapon with shitty stats and mod it to be perfect.
I think now in Guild Wars it's just too easy to obtain anything, and it's too easy to do anything.

The best times for me are always the First times. The first time I ever logged into my brand new account and was like 'WOW...just look at this place! This is awesome". Can't ever replace that first sense of awe and wonderment at what I will find on my new journey. I felt that way with each new chapter and expansion. I'm one of those "I got to see what's around the next corner" types, so for me its all about the newness of exploring unchartered areas.
Heroes, for me, didn't ruin the game. As some have mentioned it was a real huge pain in the butt to find monks to anything! They were rare, rude, and demanding. All the other professions were a dime a dozen so competition to get a monk in the group was fierce. The days of standing in Hell's Precipice waiting for monks are long gone and not missed at all.

Things were the coolest when I was just starting out, but I think it's still great now. I was a ritualist using ele skills
The one thing I think ANet screwed up on is Ursan Blessing, as has already been mentioned. I can't find a group to do some challenging areas that are looking for anything other than a homogeneous group of bears. No different classes, no strengths, no roles and no synergy. I doubt that ANet intended to replace all of the classes with this one, so it'll probably be nerfed, but still.
I love henches and heroes, but at the same time they've made the game gravitate toward solo play.

And I have to admit that I haven't seen the proph Jungle for at least 2 years. Drok/Cay running basically killed half of the prophecies content so I might add to the OP that BEFORE factions and BEFORE people started to run everything that took longer then 30 seconds was the best time for GW.
And finding a party to play is even harder today then it was back in times unless you go for Handbook missions, Dungeons and farms. I remember a lot of groups forming in LA to do Galrath for an amazing 4000exp lol. That was probably the first Master Difficulty mission in the game. I might just test how long it takes now to get a 8men pug for it.
Most of us are not ranting cause we do not like the new content. Sorrows Furnace for example was awesome and the majority of players had a good time exploring it. We are just annoyed that little challenge is left in the game. You can grind everything today. Be it wealth, titles or items. You can love your titles but you have to admit that none of them is skill based (not even the Hero title anymore). Titles are just proof that you spent a lot of time playing.

This was after about a dozen failed attempts with human groups, though. It became a large turning point for my GW career, and ultimately the largest reason I stopped joining pugs.

Feeling a sense of accomplishment when my PUG completed a mission.
Thinking that Fire Storm & Meteor Shower were the greatest skills before the AOE nerf.
Using Balthazar’s Aura on my Warrior and farming griffons, then saving up for my Dragon Armor.
Basically, GW was the most fun for me before Factions, NF, EOTN. I still have all of the chapters/expansions, and each are fun, but my fondest memories of the game are when everything was new and everyone was learning the game together.

this is actually a really hard question.
I didn't play from the very start of prophecies so I don't know what it was like right at the start but I would say that GW was best just after factions was released. Factions is by far the most beautiful campaign and I really enjoyed playing through it on my ele. Everywhere was somewhere great to look and the leveling up experience was much better now it wasn't drawn out over half the game.

My favorite time of this game was when it was just prophecies and the update for SORROWS FURNACE! It was EPIC! It seemed virtually impossible! Now I can clear SF with my heroes and just me in NM in about 20 mins, and it seems tiny and obscure.
If I could have 2 more updates though i would get Heroes cause they are awesome and inscriptions and handles etc.
Back in the day when it was just prophecies the game had such a promise around it, it felt a lot more like an experience, it literally took time (and not just 3 days) to beat the game and you felt a sense of accomplishment unlike factions were its like "oh, did i just beat the game?"
That being said my next favorite was Nightfall, awesome classes and a pretty decent story, but still to fast to beat.
***My FAVORITE thing about original prophecies was that 90% of the community did not have perfect weapons/armor. There was actual variation and everyone had their own ideas. Now a days its just pvx wiki and the same set of armor for every class. And virtually everyone has max items, that for me got rid of a lot of the magic of attaining items and enjoying the farming aspect of the game, which I originally did so I could maybe find a perfect staff.***
