OP, make both, as simple as that.
Sins are better for the HM farming runs like UW.
Elementalist do the boss farms more efficiently.
If you only have room for one, make a sin, since they are also capable of doing the same boss farms.

I also want a sin, but I think I should get a ele because SF are going to be nerfed to his normal form, or doesnt this make any snense..

whether SF will get nerfed or not is a question none of you can really answer...
and even if it gets nerfed, how badly? cause if it wont be a big nerf perma shadowform would still be viable(like it was before gwen) yes it would probably limit you to A/Mes AE+DP+SF but meh, most sins use that build anyway to farm CP...
as for versatility, a class than must use a specific skill inorder to successfuly farm is NOT versatile! the fact that you have 2 secondaries that work and choose your damage skills doesnt make it any more versatile...
so for versatility Eles take Sins any day.

however you can also compare the Terra Tank template to SF whatever. and you're incorrect in saying that it takes 3-4 skills instead of just 1. you forgot that SF without DP and either GoS or AE is pretty useless. unless you use the boss farming build in which you'll need the 2 stances instead.
the rest is the same for both builds, it still leaves you half a skill bar to play with and to choose your damage skills...
and Eles can farm with other options beside Terra Tank and SF, Sins cant...

I'd make a sin, but I already had both when Shadow Form got buffed.
Anyway, with the assassin you have a much bigger variety of places with mostly the same builds, so I would go with that

Both of the professions can farm in many places, some places not as well as the other. Elementalists have the bonus energy and more damage, Assassins have the longer lasting Shadow Form, which is basically neutralized because of the recent update of Shadow Form to 25 seconds with Shadow Arts at rank 12.
If you have no slots available, then I would recommend purchasing another slot(unless you cannot buy one) then I would ask around in the game to see which is preferred, Assassin or Elementalist. On a forum like this you won't get near as much feedback as you would in-game.

(E/Mo UW Solo Build) is one of the reasons I'm now making an ele who is @ 16, and im having to travel a ways into NF to get my skills that I need, I don't mind Sins @ all but tbh...I hate them xP. Is all they can farm is the Chaos Plains, or the entire tour like the E/Mo build can?

Actually, perma form assassin's can farm a whole lot. Just to name a few places, all hardmode capable.
Solo green boss farms although an elementalist does them faster.

Although elementalist can do some of these farms, they must do so with a variety of different builds. Assassin farmers can do all these areas, and run almost anywhere with the same core skillset.
An elementalist has to rely heavily on multiple enchants just for similar protection to what perma shadowform offers, yet still requires alot more attention to upkeep. With having to use more skills slots to keep themselves protected, terra tanks also have less room for utility and damage skills than the assassin bar has.
In the end, assassins are also just a cheaper investment overall. You won't need to purchase as much skills as an elementalist farmer for all these different areas.
So in terms of versitility, yes an elementalist has more options to a variety of farming builds. E/A for farming greens, E/Me for terratanking, E/Mo for other farms.
