well maybe if he changes his secondary to Me but since Mo/W is better for large numbers of enemies I think he'll want to keep that.
As was mentionned you can cast mending as bait for the interrupt. When SoJ is up it is easy to tell when enemies are knocked down and cast in that window.
After SoJ is finished you can rely on bonettis which should be ready to use to at least give you a good chance to dodge interrupts.

Where do you go that you really need Bonetti's on a 55? I've done UW many times and never needed it. You can just spam HB/PS for the DF bonus when you are in a large aggro. Maybe you guys have something else in mind, but Mo/Me always worked for me.

Try taking on 2-3 groups of smites at once....you'll be hiding behind bonettis my friend. Obviously you dont need to do this, but sure speeds things up. Usually in order to prevent things from being interrupted I try to cast HB behind bonettis. With 75% chance to evade its not often that it gets interrupted. Since PS is a 1/4 sec cast time I rarely find myself getting that spell interrupted. If you are having trouble with the graspings, make sure the SS/SV necro is casting SV on you while tanking them. This will prevent them from using their interrupt as well as "fear me."

Well, I suppose that's true. Personally though, I'd rather be 100% safe from interrupts and just aggro 1-2 groups at a time. When you think about it, even being able to tank several mobs at once isn't really going to save that much time if you have to worry about them interrupting critical spells, which could easily result in your death and thus having to start over again. Personal preference I guess, but that's how I see it.

bonetti's helps with energy also, dont forget that ^^
as for an anti-interrupt, there arent many good ones in the monk or warrior classes, recasting some bait spells as previously suggested, seems like a good idea.
