Male with 9 male characters and one female mule.
On this subject, I read a strange article a month or so back where it was reported that one Chinese MMO was going to force people registering female characters to prove via webcam that they were in fact female in real life!
I can't find the original article I read, but this one from The Guardian online reports the same event:

Also, does anyone else remember the April fools trick this year when ANet made every male char female and every female char male? That was rather funny :-)

Yea that april fools joke was rather cruel. Made me not want to play any of my characters. lol

Warrior - male, made it while I was still addicted to Diablo II and decided to try and replicate a Barbarian.
Warrior 2 - female, made it after my ex-girlfriend, and now I totally regret personalizing that character's set of r7s.
Monk - Named it Captain Arne (see: http://gw.gamewikis.org/wiki/Captain_Arne), female wouldn't fit the role.
Elementalist - Named it using my name written in Chinese, First word is Mai, female name, suits the role.
Ranger - Female, character name is Miniature and I have the idea that males are generally larger than females.
Assassin - Female, also named after an ex-girlfriend, going to delete it very soon.
Mesmer - Named "L Y S S A," and I've always perceived Lyssa as a Goddess, so it fits the role.
PvP slot - Always male, my PvP name is Jerry Stiller (see: http://en.wikipedia.org/wiki/Jerry_Stiller). Jerry is the male spelling of the name, so it fits the role.

My PvE characters were always a mix of males and females, though I recreated them so often I shouldn't really give a definitive list as it's bound to be partially inaccurate.
Monk: one female
Necro: one male, one female
Warrior: four male, three female
Mesmer: three female
Ele: one male, three female
Ranger: one male, about nine female
Assassin: two female
Ritualist: one male
Dervish: one female
Paragon: one male, one female

(sadly two male characters of mine are male purely because their names are references and would be silly if they were female!)
while it's just a game I still like to enjoy what I'm looking at on screen, also a personal opinion that many male character faces look too dopey or just messed up compared to the females. But I'll admit that male characters have some better combat animations, with bows in particular (my male monk using a bow is far more impressive looking than either of my females :P)
And in response to the OP, because females are much nicer to show off than male characters I think, they're also a lot more photogenic I guess.
Anyways, while I do almost exclusively play female characters, I at least don't pretend or try to act like one in game. :P

Sex was determined mainly by look, I happen to think the male necro looks bad so went with female.

Sadly its the main reason my male Mesmer never Dances "I didnt check dance till Mesmer was well into the game"
