There are some, go as far west(in old ascalon) as you can and if you dont see any, follow the edge down south. this was in bwe(i think) though, so...

yes, once you go to the academy you cant do any more pre-searing ascalon quests. going to the academy advances the story.

Mobs can use skills that get rid of enchantments, if your around the stone summit thingys they tend to do it alot.

Magi Malaquire in Lions Arch has a quest that gives you the signet of capture skill.
