Kepkhet's Refuge is pretty easy to get and isn't bad. In general though, Prophecies doesn't have much in the way of greens.
Usually, sups are better for pure "I need lots of this attribute" and minors are better for safety. Majors are mainly for meeting breakpoints.
You can change your secondary profession after completing the mission "Augury Rock" in the Crystal Desert.

Lowest possible is level 9. The exact calculation is on a talk page somewhere on GuildWiki, I'll find it when I'm feeling less lazy.
All three of those are good choices. Personally I'd use survivor, but as others have said it's down to your playstyle and build.
